To the west of China in Xinjiang province
现在我们在西宁 前往吐鲁番
And we are in Xining, making our way to Turpan
丝绸之路上的另一个目的地
Another stop along the Silk Road
下一个月我们将探索许多中亚美食
We are going to find a lot of delicious central Asian cuisine over the next month
这将会是一场终身难忘的旅行
This is going to be the trip of a lifetime
我一直都想看看丝绸之路
The Silk Road is something I’ve always wanted to see
所以我们开展了一场4000公里的旅程
So we set off on a 4000 km journey

From Chengdu to Kashgar overland

So I just started editing

And I’ve got some photos of Xining to post to our Instagram
我们现在正在一个隧道里
And we are in a tunnel right now
所以外面一片漆黑
So it’s pitch black outside
但是我觉得外面有一点惊喜
But I think there is a bit of surprise outside

We are rolling

And it is snowy
我们现在一定处于高海拔
We must be at high elevation now
这太棒了
This is awesome
我们现在正高速前进
And we are going at high speed
我们前进的速度一定有150至200千米每小时
We must be going about 150-200km per hour
看这朋友们 我们正以每小时190千米的速度前进
There it is guys we are going 190 km per hour
我们现在一定处于超级高的海拔 因为外面很亮
And we must be super high elevation because it is super bright out there
这些都是洁净的雪
And it is just pure snow
我们肯定到了一个不沾俗尘的地方
We must be in the middle of nowhere
这简直太酷了
This is so cool
我们到达吐鲁番了
We are arriving in Turpan

太新鲜了
Fresh!
一个沙漠
A desert
这就好像在后背有个峰峦如聚的沙漠
It feels like a desert with mountains in the background
还有葡萄
And grapes
来到吐鲁番就像来到了一个不同的世界
Arriving into turban felt like a different world
这里气候干热
It was dry and hot
这里的人大多数是属于维吾尔族和回族的中国人
And the people are mostly Uighurs and Hui Chinese
有着一套完全不同的美食体系
With a whole different set of cuisine
我们出发去寻找新疆最著名的菜
We set off to find one of the most famous dishes from Xinjiang
大盘鸡 顾名思义 一大盘鸡肉
The Dapanji, AKA big plate of Chicken
来到这里真的是太好了
This is really nice to come here
我对来新疆期待已久
I’ve always wanted to come to Xinjiang
我们的大盘鸡马上就要端上来了
And we have a big Dapanji coming up
我迫不及待要吃大盘鸡 我们得马上开始
I just cant wait for the Dapanji we gotta go right in
哦 太美味了
Oh yeah
这个真的很多汁
That is really juicy
不像我期待的那样软 但是里面满是孜然和红辣椒的味道
Not quite as tender as I would have hoped but that cumin and chili flavour is just infused in there
肉很大 因为一串就要五块钱
And they give you a large piece of meat because they are 5 kuai each
很大
It’s huge
全都是土豆和红辣椒
It’s full of potato, chili
很大片 很大块
Huge slices, huge chunks
这是一个巨大盘鸡
Thats a huge plate of chicken
这就是大盘鸡字面上的含义
Thats what the name literally means
一大盘鸡
Big plate of chicken

哦 对
Oh yeah
还有大片的土豆
And big potato slices
超多大蒜
Lots of garlic
接下来是这道菜真正的秘密
And then the real secret
真正的宝贝在大盘鸡的底下
The real treasure is at the bottom
当你吃完这盘菜时你会发现下面还有拉面
Oh, there is hand pulled noodles at the bottom for when you finish your meal
朋友们 这个真多
Oh guys, this is huge
真有趣
This is true joy

Oh
哦 太美味了
Oh yeah
就像是一个麻辣肉桂
It’s like a spicy cinnamon
这里面有强烈的肉桂和八角茴香的味道
There is quite a strong cinnamon and star anise flavor in there
这里就是底下的拉面宝藏了
Theres this treasure of noodles on the bottom
此面只应天上有
Hand pulled heavenly noodles
调料都很入味
That soak in all of that sauce
没有比这更好吃的大盘鸡了
Now that is a top quality dapanji
肉桂和八角茴香的味道真的很浓烈很强
The cinnamon and star anise flavor is really bold and strong
这些辣椒不是很辣
The chilies are not too spicy
恰到好处 我简直要爱上它了
It just gives it a nice little touch of love
还有这些拉面 它们的口感简直完美
And these hand pulled noodles, the texture is really perfect
它们能让你进入一个全新水平的面条天堂
That’ll bring you to a new level of noodle heaven
婷刚刚在这找到一块鸡爪
And Ting found a chicken foot in there

I just want to give you a quick update
在我们吃完大盘鸡之后
Right after we finished that dapanji
我回到了我们在吐鲁番的旅社并开始编辑这个系列的第一个视频
I came back to our hostel here in Turpan and began editing the first video from this series
也就是从成都到西宁这一段
Which was from Chengdu to Xining
我没有这一部分的备份
And I didn’t have a backup of it
硬盘刚刚崩溃了
And the hard drive crashed
现在已经是出问题后的第两天
And it is now 2 days after that happened
我们昨天一整天在吐鲁番在一个数据恢复中心尝试去解决这个问题
And we spent all of yesterday here in Turpan at a data-recovery center trying to get it off
这就是我们在这住的旅社
And this is our hostel right here
能否恢复那些数据就得看运气了
And it’s up to luck right now whether we get that data back
否则（在你们看到的视频里）我们的旅程就得从吐鲁番开始了
Otherwise the journey is going to have to start here in Turpan
我们将会保持乐观的态度
We are going to stay positive
并且继续向前
And keep moving forward
这只是我们丝绸之路旅程的开始
And it’s just the begining of our journey of the Silk Road
